School mornings are the worst time to be deciding what breakfast is. An hour at the weekend, and a freezer that is stocked, changes that. Everything here is a recipe on this site, with its own storage notes, so you know exactly how long each one keeps.

From the freezer: grab, thaw or toast

Breakfast How it keeps On the morning
Waffles Freeze flat on a tray, then bag Straight into the toaster from frozen
Banana pancakes Freeze in a stack with baking paper between them, up to 2 months Toast or microwave from frozen
Seeded oat muffins Freeze on a tray, then bag; best within about 2 months Thaw overnight, or eat on the way
Banana oat muffins Freeze on a tray, then bag; best within 2 to 3 months A frozen muffin thaws by mid-morning
Apple muffins Freeze for up to 3 months As above
Banana bread Slice first, then freeze, about 2 months Toast a slice from frozen

From the cupboard and fridge

  • Homemade granola keeps 3 to 4 weeks in an airtight jar at room temperature. One batch covers most of a month.
  • Berry yoghurt pots keep 3 to 4 days in the fridge if you leave the granola out until serving. Frozen berries go in straight from the freezer and thaw overnight.
  • Pancake batter can be made the night before and kept in the fridge. Loosen it with a splash of milk in the morning.
  • Smoothies are fast if the fruit is ready. Freeze overripe bananas in chunks on a tray, then bag them, and the base is always waiting.

A one-hour Sunday plan

  1. Oven on. Get a tray of granola in first, since it needs stirring and cooling.
  2. While it bakes, mix a batch of muffins. They go in when the granola comes out.
  3. Meanwhile, make the waffles or pancakes on the hob, and cool them on a rack.
  4. Finish by portioning yoghurt pots for the first few days and bagging banana chunks for smoothies.
  5. Everything cold goes in the freezer on a tray first, then into labelled bags, so it doesn’t stick together.

Cool everything completely before bagging it. A warm muffin sealed in a bag steams itself soggy, and warm food raises the temperature of everything else in the freezer.
