Most banana bread is designed to be eaten warm with butter, which makes it soft and a bit fragile. This one is deliberately firmer so a slice can go in a lunchbox and arrive as a slice rather than as crumbs.
The bananas have to be properly gone
Heavily speckled or black. Yellow bananas give you a pale, bland loaf, because the starch hasn’t converted to sugar yet — this is the main reason a banana bread disappoints. If yours aren’t there, bake them in their skins at 180°C/350°F for about 15 minutes until black, then cool before using.
Why it slices instead of crumbling
Slightly more flour and slightly less sugar and fat than a standard recipe. Sugar keeps cake soft and tender, which is lovely on a plate and unhelpful in a bag. If you want the softer version, add another 40g sugar and an extra tablespoon of oil.
The other half of it is cooling. Slice it warm and it tears. Let the loaf cool completely — an hour at least — and the crumb sets firm enough to cut cleanly.
Storage
Three days wrapped at room temperature, or slice it and freeze. Freezing in slices is far more useful than freezing the loaf: you take out exactly what you need at 7am and it is thawed by break. Best quality within about two months, matching general freezer guidance for baked goods.
