Five minutes, one blender, and a reliable way to use up bananas and the last of a punnet of strawberries. It is also, honestly, one of the few things a lot of reluctant eaters will take without negotiation.

Use frozen fruit, not ice

This is the whole difference between a thick smoothie and a thin pink drink. Ice chills it and then melts into water, diluting everything. Frozen fruit chills it and thickens it at the same time.

Freeze bananas when they go too ripe: peel, break into chunks, freeze on a tray then bag. It costs nothing and means you always have the base.

The ratio

Roughly two parts fruit to one part liquid by volume, then loosen if you need to. Too much milk at the start cannot be undone without adding more fruit. Start thick — you can always pour more in.

A note on sweetness, and on honey

Ripe fruit is usually sweet enough and we would leave it there. If you do sweeten it, do not use honey for a child under 12 months — the NHS and the US CDC both advise against honey under one year because of the risk of infant botulism.

Ingredients

  • 1 ripe banana, preferably frozen in chunks
  • 150g strawberries, frozen
  • 200ml milk, or any plant milk
  • 100g plain or Greek yoghurt
  • 1 tsp honey or maple syrup, optional (see note - no honey under 1 year)

Instructions

  1. Put the milk and yoghurt into the blender first. Liquid at the bottom stops the blades jamming.
  2. Add the frozen banana and strawberries on top.
  3. Blend on high for 30 to 60 seconds, stopping to scrape down the sides if it stalls.
  4. Taste. Add the honey or maple syrup only if the fruit needs it, and blend for a few more seconds.
  5. Loosen with a splash more milk if it is thicker than you want, and serve straight away.

Notes

  • Frozen fruit, not ice. Ice melts and waters the smoothie down.
  • Do not give honey to a child under 12 months.
  • Freeze over-ripe bananas in chunks on a tray, then bag them, so the base is always ready.
  • Leftovers freeze into lolly moulds rather than keeping well in the fridge.
