These sit between a breakfast muffin and a flapjack: oats and seeds for structure, only a modest amount of sugar, and sturdy enough that they arrive at school in one piece rather than as crumbs in the bottom of a bag.

Why they hold together

Rolled oats absorb liquid and give the crumb something to hang onto. Use instant or quick oats instead and the texture goes pasty — this is the one substitution that genuinely does not work.

The other structural help is not overfilling the cases. Three-quarters full gives a muffin with a domed top that holds; filled to the brim they spread over the edges and tear when you lift them out.

Sweetness

At 80g of sugar across twelve muffins these are noticeably less sweet than a bakery muffin. If your household is used to shop-bought, expect a comment the first time. You can push it to 120g without changing anything else.

Freezing and packing

Cool completely first — a warm muffin sealed in a container steams itself soft. Freeze on a tray in a single layer, then bag them, and they stay separate. Best quality within about two months, consistent with general freezer guidance for baked goods. One straight from the freezer into a lunchbox at 7am is thawed by morning break.

Ingredients

  • 150g plain or all-purpose flour
  • 100g rolled oats (not instant)
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda (baking soda)
  • 1 tsp ground cinnamon
  • 1/2 tsp fine salt
  • 80g mixed seeds - pumpkin and sunflower - plus extra for the tops
  • 2 large eggs
  • 200ml milk
  • 80ml neutral oil
  • 80g light brown sugar or honey

Instructions

  1. Heat the oven to 180C / 350F / gas 4 and line a 12-hole muffin tin with paper cases.
  2. In a large bowl, stir together the flour, oats, baking powder, bicarbonate of soda, cinnamon, salt and seeds.
  3. In a jug, whisk the eggs, milk, oil and sugar until combined.
  4. Pour the wet into the dry and fold just until the flour disappears. A few streaks are fine; overmixing makes them tough.
  5. Divide between the cases, filling each about three-quarters full, and scatter a few extra seeds on top.
  6. Bake for 20 to 22 minutes, until risen and a skewer in the centre comes out with moist crumbs but no wet batter.
  7. Cool in the tin for 5 minutes, then move to a wire rack and cool completely before packing or freezing.

Notes

  • Rolled oats only. Instant oats turn the crumb pasty.
  • Push the sugar to 120g if your household is used to shop-bought muffins.
