A stir fry is the fastest proper dinner there is, and the most commonly ruined. Both failures come from the same place: the pan.

Rule one: everything prepared before the pan goes on

Stir frying takes six or seven minutes total. There is no time to chop a pepper while something else cooks — it will overcook while you do.

Cut everything first, put it in bowls in the order it goes in, mix the sauce, and only then turn the heat on. This feels fussy the first time and is the entire reason restaurant stir fries work.

Rule two: a hot pan, and do not fill it

Get the pan properly hot before anything goes in — a drop of water should sizzle away instantly.

Then add the vegetables in stages, and resist filling the pan. Overloading drops the temperature, the vegetables release water and everything boils in its own juice. You get grey, soft vegetables instead of bright, crisp ones. Two batches take two minutes longer and are a different dish.

Hard things first, soft things last

Same principle as vegetable soup, faster:

  1. 2–3 minutes — carrot, broccoli stems, onion
  2. 1–2 minutes — peppers, mangetout, broccoli florets
  3. 30 seconds — beansprouts, spinach, spring onion, garlic

Garlic and ginger go in late deliberately. Early, over high heat, they burn and turn bitter in under a minute.

Mix the sauce in a jug first

Adding soy, honey and cornflour separately to a screaming hot pan means the cornflour lumps and the honey burns. Whisk them together cold, pour it in at the end, and it thickens and coats in about thirty seconds.

Making it a full meal

Add strips of chicken, beef, prawns or cubed firm tofu at the very start and cook until done — chicken to 165°F (74°C), per USDA guidance — then set aside and return it with the sauce. Serve with rice or noodles.
