Read this bit before you use leftover rice
Cooked rice deserves more care than most leftovers. Uncooked rice can carry Bacillus cereus spores that survive cooking; if cooked rice then sits at room temperature, those spores can germinate and produce toxins that reheating does not destroy.
So the rule is straightforward. Cool cooked rice quickly — spread it out rather than leaving it in the pan — get it into the fridge within two hours, use it within three to four days, and reheat it until steaming hot all the way through, once only.

Why day-old rice works better
Refrigerated rice dries out slightly and the grains firm up and separate. Fresh, warm rice is soft and damp, so it clumps and steams in the pan instead of frying — you get a sticky mass rather than distinct grains.
If you only have fresh rice, spread it on a tray and refrigerate it uncovered for at least an hour first.
The other rule: a hot pan and not too much in it
Fried rice wants high heat and room to move. Overload the pan and the temperature drops, the vegetables release water, and everything steams. Cook in two batches rather than crowding it.
Making it a fuller meal
Leftover chicken from one-pan chicken and rice goes in at the same time as the rice. Prawns, tofu or extra egg all work. Soy sauce is salty, so taste before adding more.
