One pan, one hob ring, and a complete dinner. The appeal is not just the washing up — it is that the rice cooks in the chicken juices and stock rather than in water, so it actually tastes of something.
The ratio that makes or breaks it
Two parts liquid to one part long-grain rice, by volume. 300g of rice takes roughly 600ml of stock. Get this wrong and you get either soup or crunch, and neither is recoverable once the broccoli is in.
Two rules that go with it: once the lid is on, do not stir — stirring releases starch and turns it gluey — and do not lift the lid to check, because the steam you let out is the steam cooking the rice.
Why the broccoli goes in late
Five minutes at the end. Any longer and it goes grey and soft, which is the fastest way to have it left on the side of the plate. Sitting on top of the rice it steams rather than boils and keeps its colour.
Chicken temperature
Chicken needs to reach 165°F (74°C) throughout — the USDA figure for all poultry. Check the thickest piece with a probe rather than judging by colour.
The rest rests
Five minutes off the heat with the lid on, before you touch it. The rice finishes absorbing and the grains firm up. Serve it straight away and the bottom is wetter than the top.
Leftovers, and a real safety point
Cooked rice is one to treat carefully. Cool it fast — spread it out rather than leaving the pan on the hob — refrigerate within two hours, eat within three to four days, and reheat to steaming hot all the way through. The detail is in how long leftovers last.
