Ten minutes, one pan, and a dinner that a child can genuinely help make. Quesadillas also sidestep a lot of mealtime negotiation, because everyone chooses what goes in their own.
Two rules, and they are the whole thing
Cheese on both sides of the filling. Melted cheese is the glue. A layer against each tortilla, filling in the middle, and it holds together when you cut it. Filling straight onto bare tortilla and it falls apart on the board.
Do not overfill. The commonest mistake. A thin, even layer folds, seals and crisps. A generous one splits at the fold, leaks into the pan and steams instead of browning. It should look like less than you want.
Medium heat, and be patient
High heat browns the tortilla before the cheese has melted, which gives you a crisp shell full of cold cheddar. Medium, three to four minutes a side, gets both right. You are waiting for the cheese, not the colour.
No oil is needed in a non-stick pan — a dry pan gives a better, crisper surface than a greased one.
Letting children build their own
Set out the fillings in small bowls and let them choose three. It is a real decision, it takes thirty seconds, and a child who assembled their own dinner is considerably more likely to eat it — the mechanism is the subject of our picky eater guide.
Adults handle the pan. Children can spread, sprinkle and choose.
Cutting and serving
Let it sit for a minute before cutting, or the molten cheese runs straight out. Cut into wedges with a pizza wheel if you have one.
For younger children, cut into strips rather than wedges — easier to hold — and check the temperature in the middle, which stays hotter than the outside for longer than you would think.
Leftovers
Cold quesadilla is a good lunchbox item, cut into strips. It keeps three to four days refrigerated like any cooked leftover; see how long leftovers last. Reheat in a dry pan rather than a microwave, which makes them floppy.
